The hotel
From La Pinède to Cheval Blanc.
The house on the beach of La Bouillabaisse opened as La Résidence de la Pinède in 1936, under the pines at the edge of the bay. For decades it was a Saint-Tropez institution, and Arnaud Donckele earned three Michelin stars in its dining room, La Vague d'Or. It remains the only hotel in the town with a private beach of its own, a few minutes on foot from the waterfront and the town centre.
LVMH bought it in 2016. Jean-Michel Wilmotte and the local architect François Vieillecroze reworked it over three years, cutting the number of rooms, and dressed it with ceramics and furniture by Roger Capron. It reopened on 16 May 2019 as the fourth Cheval Blanc, after Courchevel, the Maldives and St Barth. Guerlain opened its only Saint-Tropez spa in the house, and the perfumer Thierry Wasser composed a scent for it, Riviera Chic.
