The hotel

Sushi on an island in Nanao Bay.

Notojima is an island in Nanao Bay, off the Noto Peninsula and a long way north of Kanazawa. Hitotsu opened on its coast in 2023 and calls itself a sushi auberge: a handful of rooms, one counter, and a menu set each day by the local catch. There is no room service; guests eat together at Aidokoro. The MICHELIN Guide gave the inn a Key in 2026.

The rooms, each named after a place on Noto, mix tatami floors with pale Scandinavian-style beds, and the glass runs from floor to ceiling. Bathrooms are tiled dark, with deep tubs looking out at the water. Some rooms add their own terrace and sauna, and every guest can use the spa, with scented outdoor baths and a wood-fired sauna. The inn takes guests aged 13 and over.

  • The counter Dinner is sushi at Aidokoro, built on seasonal Noto seafood, and the resident sushi chef cooks breakfast too.
  • Water from every room Floor-to-ceiling windows face the sea or the bay, and the tubs are placed to look out over it.
  • Heat and steam Outdoor baths and a wood-fired sauna for all guests, and private saunas in the two suites.
