The hotel

French Saigon, built in 2005.

Park Hyatt Saigon opened in the summer of 2005 on Lam Son Square, facing the Opera House. The building is new, though it was drawn in the manner of the French colonial city around it, by the Malaysian firms Damansara Architects and EDC Design. The Japanese studio Super Potato designed the restaurants. The rooms were meant to feel like a Vietnamese residence, and the lobby leans towards Indochine.

The site has a harder history. It once held the Brinks Hotel, quarters for American officers, where a car bomb went off on Christmas Eve 1964. That building was pulled down to make way for the hotel. Since then the Park Hyatt has been renovated in depth, and Square One has been recognised by the MICHELIN Guide three years running. Opera, the Italian dining room, still has its terrace on the square.

  • The pool garden A 20-metre outdoor pool in a landscaped tropical garden, a rare thing in the centre of the city. Some rooms step straight out onto the deck.
  • Square One French cooking with Vietnamese flavours under chefs Arnaud Schuttrumpf and Vo Quang Phuc, with local produce at the heart of the menu.
  • On foot The Opera House is across the square, and the Central Post Office and Notre-Dame Cathedral are a few minutes' walk.
