The city
Fish sauce, pepper and a western shore.
Phu Quoc lies off the Cambodian coast but belongs to Vietnam, and it has long lived from the sea: its fish sauce and its pepper are the island's best-known products. The MICHELIN inspectors, who will publish their first Phu Quoc selection in 2027, describe two kitchens side by side, the plain cooking of the fishing villages and a newer table run by chefs from abroad. Travellers from every country may stay up to thirty days without a visa.
Plan for the four months from December to March. Afternoons reach 29 to 32 °C, the sea stays near 28 °C and the rain is light. From May the rains set in, and August brings close to 370 mm.
- Bai Truong The long beach of white sand on the western shore, where the Regent stands.
- Fish sauce The island's best-known product, and the base of the cooking the MICHELIN inspectors came to taste.
- Pepper Phu Quoc pepper is the other local product the guide singles out, grown on the island itself.

Phu Quoc International lies about 10 km south of Duong Dong, the main town, and handles domestic and international flights in a single terminal. Sun Group is enlarging it for the APEC summit of 2027, with a second passenger terminal, a VIP terminal and a second runway.
