The hotel
The Carl Gustaf, under a new name.
Jacques Laurent opened Le Carl Gustaf in the late 1980s on the hillside above Gustavia, and it became the town's first five-star hotel. It had no beach of its own; its rooms looked down on the harbour instead. The hotel closed in the mid-2010s, and the Barrière group bought it and spent four years on the works, rebuilding it as a cluster of separate bungalows on the slope.
It reopened in 2020 as Hôtel Barrière Le Carl Gustaf, with interiors by the Paris studio Gilles & Boissier and bungalows terraced down the slope towards the port. In 2026 it took the Fouquet's name, the fourth hotel under it after Paris, New York and Courchevel. The MICHELIN Guide gave it one Key in 2025 and kept it under the new name.
- Beefbar The Monaco steakhouse on the highest point of the hotel, its menu split into Beef, Reef and Leaf, with Thierry Paludetto as executive chef.
- Shellona A beach restaurant on Shell Beach, listed with the hotel's dining, open since 2016 and about five minutes on foot.
- The spa Biologique Recherche facials and massages, a Technogym fitness room and a yoga studio.
